Sri Lankan Pancakes (Coconut Stuffed Pancakes)


This is a sweet from Sri Lanka which is more suitable for tea time.
Pancakes are stuffed with a mixture of coconut & sugar. Also it doesnt take much time to prepare this.




Ingredients (for about 7-8 pan cakes)

For Pancakes
1/2 cup all-purpose flour
1 egg – beaten
¼ tsp baking powder
Pinch of turmeric (optional)
salt to taste
1/2 cup coconut cream(milk)
 
For Filling: 
1/2 cup grated coconut.
About 3 tbspn of brown sugar (or to taste)
1 green cardamom crushed.
 Salt & Pepper to taste(optional)

Method:
Sift flour & baking powder together.
Add beaten egg & whisk well.Gradually add milk and make a batter.
Adjust salt & add a pinch of turmeric.
Whisk well & keep the batter aside for about 15 minutes.

Meanwhile, make the filling.
Dissolve sugar in 2-3 tbspn water. Bring this sugar water mixture to boil in a pan in medium heat.
Then add the grated coconut & cardomom & mix well. Adjust salt & pepper (optional)
Keep aside to cool.

Making the Pancakes:

Before making the pancake, strain the batter to avoid any lumps. This will give smooth pancakes.

Heat a nonstick pan over medium heat for about 1 minute & coat it with a drop of cooking oil.
Once it is hot, spoon some batter on it & swirl the pan to distribute it evenly & to make a round shape.
Cook until lightly brown.
Remove to a plate.
Immediately spread about a spoon of filling onto cooked pan cake.
Then roll it.
Repeat with the remaining batter.
Serve hot & enjoy!!

Lawariya (Stuffed String Hoppers from Sri Lanka)



Lawariya is a Sri Lankan traditional sweet & it is suitable for tea time. This is a kind of stuffed string hoppers (indi appa) & this is very easy to cook if you know how to prepare string hoppers. (Check here for string hoppers recipe)


Here is my way of preparing ‘Lawariya’.

Ingredients( for 4 nos Lawariya)

½ cups Roasted rice flour (String hoppers flour)
½ cup fresh grated coconut
3-4 tbspn sugar (jaggery is more better, but I used some brown sugar)
Boiling water (after the steam goes away)

Special Utensil
String hopper mould

Method

First heat a pan. When it is hot add sugar & coconut together & make it a fine mix. Adjust sugar according to your taste.



Roast the flour well and sieve it into a bowl. Add a little salt to flour.
(or use some instant Indi appa flour which you can by from a stall)
Then slowly add enough boiling water (but after the steam go out) to make a soft but not sticky dough.

Fill string-hopper mould with dough.
Squeeze the dough on to a polythene wrap as shown below in round shape. But bit bigger than the normal size of string-hoppers.

Put a scoop of prepared coconut mix on it.

Wrap it as shown below.



Then steam until it cooks well. (About 5-7 minutes).


Remove from the steamer.

Serve & enjoy!!

Bread Baskets


I found this recipe last Saturday from Recipe Lion & wanted to try it for tea time as an evening snack. It was very easy to prepare & a good way to use some bread slices left from morning.Anyway my recipe is adapted from the original recipe & with some changes in ingredients.


Ingredients (for 6 bread Baskets)

6 slices of bread
Few sliced red bell pepper
Few sliced green bell pepper
Few sliced tomato
Shredded Cheese
Butter
Salt pepper to taste


Method
First allow to pre heat oven for 400F.
Remove the edges of the bread.
Apply butter on bread.
Arrange the bread slices on cupcake baking pan. Keep the butter applied side as outside of the basket.
Now there is a space in bread basket.
Fill the baskets with mixed red, green bell pepper & tomato slices. Sprinkle some salt & pepper as per choice.

Top with shredded cheese (Treat the bread basket as a pizza base & use a mix of your choice to fill together with cheese)

Bake in 400F for 15-20 minutes.
Now it is ready to serve.

I used some cupcake cups to serve as it gives some finishing appearence. :)

Wrapped Sausage Bites (Pigs in a Blanket? )


Ok, first I want to say that I don’t eat pork or many other meats. But this is a recipe I have read some time ago & it was in my mind. After I tried it, I wanted to find a name. What I did is, searched in Google & found this name. Yes, these appetizers look like ‘pigs in a blanket’ & this is something that a hot dog becomes a pig…..:)

Anyway here is the recipe & it was very easier to prepare.
Ingredients
A prepared dough (Any pastry dough goes with this & I have frozen paratha,so I used it)
Few sausages

Method
Pre heat the oven to 400F
Cut a strips from the dough.
Wrap it around the sausage.
Then cut the wrapped sausage into small pieces of about 2 inch.

Bake in 400F for about 20 minutes or until golden brown.
Serve with any sauce.

Really simple and easy appetizer & I think this is good to serve in any gathering.
 I found some recipes,that they use cheese inside the dough (blanket).Also I saw some  recipes which they use cabbage as the wrap.Anyway,it depends on the way we prepare & I am sure this would be tasty in anyway...

Bird Nest (Noodles Fritters)


I found this recipe from Santi’s Kitchen.Last week I had some leftover noodles from previous day & thought of trying this recipe for tea time. The taste was good & it was easy to prepare too.

Here is my recipe.

Ingredients (for 6 fritters)
1 small packet of cooked noodles (or leftover cooked noodles)
1 egg beaten
Salt, pepper & chili powder to taste
Some vegetable or cooked peas to garnish


Method
Preheat oven to 400 F degrees
Beat egg with chili powder, salt & pepper.

Mix cooked noodles & beaten egg together.
Grease a cupcake pan.
Fill cupcake pan with noodles mixture as shown.

Bake in oven for about 25minutes.

Remove all baked fritters on a wire rack.

Garnish with some vegetables.

As I prepared this with some leftover noodles,& also we are spicy lovers,I garnished it with some capcicum.I suggest any kind of cooked peas would be better & will give the idea of a bird nest.

This is so easy to make & good for tea time.
