Veggie Cups with Mustard Dip

I like these Veggie cups, because it is an easy & healthy appetizer. Also it suits as a vegetarian appetizer and good to prepare for a party or a small gathering. I used a mustard dip with colourful veggie cups; anyway the sauce can be changed as per the taste. Usually I prepare this for an evening as a healthy snack. Not only the vegetables mentioned in below recipe, I use some other veggies which can be eaten raw.
If it is a party or a gathering, I use small cups to keep the veggies as an individual serving cup, then it is easy to serve and it looks pretty!

Spiced Guava is a popular street food in Sri Lanka. We commonly call it as ‘Pera Achcharu’.Not only guava, we like to eat pineapple, mango, ambaralla  or even ‘Veralu’ (Sri Lankan olive) with some spices added. I remember, during the school days we used to buy these from street vendors near the school. They dice fruits and add chili, salt and sugar mixture into diced fruits. We could buy a bag of ‘Achcharu’ for few rupees.

Corn Recipes are always delicious with its creamy taste. In Sri Lanka, we always like to eat fresh corn cobs after boil in water.(Commonly called as ‘Bada Iringu’).Boiled Bada Iringu is a common street food in Sri Lanka, specially when we travel for long trips towards the southern part of Sri Lanka. I was lucky enough to eat fresh corn just after picked from the plant. Now, here in Singapore, I still buy corn cobs and try to adapt them in recipes. But GMO is something I am not very sure in these products.

Fresh Fruit Kebabs are simple to prepare and it is a great idea for a party. Fruit Kebabs are so colourful & a stunning display for the party table. I prepared these fruit Kebabs for a gathering with friends & it was a hit among friends. Mostly people like to enjoy fruit in a skewer than fruit in a platter. Also Fruit Kebabs are good as a healthy dessert with more nutritional value. Any colourful & fresh Fruit can be used to prepare these Fruit Sticks.

Snack Gifts with Trial Mix


I was doing some studies for the past year & we had final exams during last week. After the exam, all the classmates were supposed to meet for a class gathering. Though we have ordered food, I just wanted to share something with the classmates & this was a quick idea came to me to participate with the gathering. This was a great idea as I could prepare all snack bags on the day before the party. I never expected, but this was a hit among my friends. Everybody loved these cute snack bags.

Making popcorn in a microwave is not a new recipe. Anyway I found it recently & started to make them at home. This is a ridiculously easy recipe.

I did this again yesterday during my office lunch time. Yes, I have started to share my recipes with my colleagues. :) We have a plan to cook something new in each week. Anyway it is a challenge as I have to consider many things while selecting a recipe. It must be easy, must suit with tastes of friends from different Nationalities, must be able to cook using the few utensils at office, must be with less ingredients etc etc

Easy Microwaved Potato Chips

Quick and easy Microwaved Potato Chips
This is a very easy recipe to prepare Potato chips using Microwave; however it is not suitable for more servings. Because it will consume time as  we have to repeat the procedure in few batches.Also check this easy Microwave recipe for Pop corn.Another quick snack idea when you are in a lazy mood! :)
No much oil in this Microwaved Potato Chips

Ingredients (1 serving)
1 medium size potato
Pinch of chili powder
Pinch of salt
A drop of oil (optional)

Method
Wash & peel the skin of potato.
Slice into thin slices.
Mix chili & salt with potato slices.
If you use oil, mix it with the potato slices.(optional)
Place them in a microwavable dish.

Microwave in ‘high’ for 2 minutes.
Then turn the slices to other side.
Microwave for another 1 minute in ‘high’.  (if chips are not done, change the timing accordingly, however this is the cooking time for me)
Repeat the same procedure if any potato slices are available.
Chips are ready to serve.

Note: Apply a drop of oil on the plate.It will avoid sticking some tiny chips on to plate.

Savory Pancakes


This savory pancakes are easy to make. It is good as a breakfast or even good to have with a cup of tea.
Ingredients (for 5 pancakes)
½ cup flour
½ tspn baking powder
1 egg
¼ cup milk
Salt & pepper to taste
1 cup grated carrot, sliced cabbage & any mix vegetables
Cooking oil

Method
In a mixing bowl, mix flour, baking powder & salt,pepper  together.
In another bowl, whisk egg & milk together, then add mix vegetables. Mix well.
Slowly add this mix to the flour mix, make a batter mixing dry ingredients together.
Heat a pan,add 1 tsp oil. Once oil is hot, add some of the batter & make into a round shape. After 2 minutes of cooking; t urn the pan cake to the other side & cook until golden .
Continue the same procedure with remaining batter.
Pancake is ready to serve.

These Prawns wrapped in ham slices were a great hit and vanished fast. Prawns are one of our favourites and I used to cook different recipes using prawns. When it comes to a gathering, this is an easy dish to prepare as an appetizer.


Here is my recipe of Ham wrapped  prawns.

Ingredients (for 12 nos)

Prawns 12 nos
Ham slices 12 nos
BBQ sauce
Black pepper sauce
Few tooth picks

Method

Pre heat oven to 425F
Clean prawns properly.
I microwaved Ham slices for 1 minute before using.
Then wrap the prawns using ham slices & inserted a toothpick to keep it wrapped.
Then I brushed some Black pepper sauce & BBQ sauce together over them.
Baked in aluminum foil lined baking pan for about 15 minutes.

Serve hot. It was a really tasty finger food.

Kokis is a traditional sweet from Sri Lanka & it is one of our favourites. Anyway still I don’t know how to make Sri Lankan traditional sweets, but after learning many other Sri Lankan cooking, now I am in a plan to try Sri Lankan sweets. We have a lot of traditional sweets in Sri Lanka.We celebrate New Year in April & it is the time mostly we taste all these sweets.

Bread Baskets


I found this recipe last Saturday from Recipe Lion & wanted to try it for tea time as an evening snack. It was very easy to prepare & a good way to use some bread slices left from morning.Anyway my recipe is adapted from the original recipe & with some changes in ingredients.


Ingredients (for 6 bread Baskets)

6 slices of bread
Few sliced red bell pepper
Few sliced green bell pepper
Few sliced tomato
Shredded Cheese
Butter
Salt pepper to taste


Method
First allow to pre heat oven for 400F.
Remove the edges of the bread.
Apply butter on bread.
Arrange the bread slices on cupcake baking pan. Keep the butter applied side as outside of the basket.
Now there is a space in bread basket.
Fill the baskets with mixed red, green bell pepper & tomato slices. Sprinkle some salt & pepper as per choice.

Top with shredded cheese (Treat the bread basket as a pizza base & use a mix of your choice to fill together with cheese)

Bake in 400F for 15-20 minutes.
Now it is ready to serve.

I used some cupcake cups to serve as it gives some finishing appearence. :)

Vegetable Roti



In Sri Lanka, we have popular appetizers or snacks which commonly call as ‘short eats’. I am not very sure they were prepared at home as it is very easy to buy.

Anyway this vegetable roti is a popular Short eat in Sri Lanka & they were prepared using Godamba roti.(Paratha).

As I have frozen paratha, this is a easy snack at my home most of the time.


Here is the recipe:
Ingredients (For 5 Vegetable roti)

5 uncooked Godamba roti / (paratha)
1 boiled potato-mashed
A handful of sliced spring onion or leeks (I used spring onion)
Sliced mixed vegetables of your choice (Carrot, cabbage etc)
Few curry leaves sliced
Onion sliced
1 tsp Chili powder
Salt & pepper to taste
1-2 tbs oil

Method
To prepare the filling,
Heat oil in a pan, once oil is hot; add mashed potato together with other vegetables. Mix & add chili powder, salt & pepper to taste.
Cook the mix well & switch off from the flame.


Take one paratha, scoop a portion of the mixture on it.(Check here on how to make paratha/godamba roti) 

However I used store bought 'Frozen Paratha',let it thaw before  wrapping, if you use frozen paratha.

Wrap it as shown below into square shape.


 Heat a flat pan & cook wrapped vegetable roti, turning both sides & also sides.

Serve hot. It is tasty alone or with some tomato sauce.















Easy Cucumber Appetizer



I came across this recipe in a website some time ago & tried at my pantry. These pictures were in my computer for some time,& thought of posting it.
This is a very easy recipe & good for anytime as a quick snack or an appetizer.




Ingredients:
Cucumber
1 onion
1 capsicum
1 tomato
Few tooth picks
Salt & pepper

Method
Wash cucumber & other ingredients.
I didn’t peel the skin of the cucumber, but if you don’t it the skin, peel the skin & cut into few round shape slices.
Same manner, slice onion into rounds.
Slice tomato & capsicums.
Sprinkle some salt & pepper according to taste & mix all.
Arrange cucumber piece, onion round, tomato piece & a capsicums piece as in photos using a tooth pick.





Serve with tomato ketchup.
You can add any fresh vegetable to these bites according to choice.
