I cooked Bell Pepper rice few days ago and really like the taste. Actually, I’ve read about this Bell Pepper rice in different Food blogs time to time, but my thought was this can be another rice dish. I never thought Bell Pepper can add a different flavor to the rice.

This is not that famous Singapore Curry Rice. Instead I came up with my own curried rice recipe when I wanted to cook one pot meal. These days my cooking is limited to few dishes. If you look for some spicy but still time saving rice recipe, try this. Sure, you’ll like. When I cook this rice, my home is filled with aroma of the spices. Not only that; the spices add flavours to the rice while turmeric gives an appealing look.

These days one pot meals are very popular at our home. We prefer to eat rice at least for one meal, I cook different rice recipes by adding more vegetables into it. To change the taste, I adjust the quantities of each vegetable and try to get different flavors and tastes.
Purple cabbage or red cabbage is another vegetable with a good amount of nutrients and vitamins. Sometimes I use purple cabbage in a salad. If not, the easiest way is to use it in a fried rice to get a colourful and healthy meal.

 Fried rice is very popular at our home due to its easiness to cook.I cook this saucy fried rice more often because it is a great one pot meal which can easily balance the nutrients in it by adjusting the vegetables.And I use leftover rice which makes the fried rice more tasty and also good to reduce food wastage.

This Broccoli rice is perfect for meal box for both adults and kids. Due to the health benefits of this green veggie, I try to include it in different recipes. Broccoli Rice is one of them. I cook broccoli rice more often to pack in meal box. This is a really easy to cook one pot meal. For this recipe, I use 1 cup of broccoli florets together with another cup of mixed vegetables. Therefore, the rice is flavourful with the taste of broccoli. I usually use leftover rice for this rice, so this is a great recipe to minimize the wastage in my kitchen.

Kiribath (MilkRice) is a traditional food from Sri Lanka, Kiribath is our ceremonial food which we cook for any festival or special occasion. Even today, before start any work for the New Year 2013, I cooked Kiribath (Milk Rice) as our breakfast.

I have shared Kiribath recipes before. So I thought of sharing this Bada Iringu Kiribath (Milk Rice with Fresh Corn) recipe as the first post of year 2013.I’ve cooked this sometimes ago, but couldn’t post it here.

Sausage Rice

 
This Sausage Rice is more similar to a Spanish Paella Recipe. The rice is more flavorful if it is cooked slowly on a stove. But in my recipe, I used the rice cooker. However, still this Sausage Rice is with full of flavor & it is very easy to cook.

Cardomom & Coconut Pulao Rice



This rice is tasty specially because of shredded coconut & this is very easy to prepare.

Ingredients (serves 2)
2 cups  basmati or long grained rice
Cooking Oil
1 large onion, sliced
1 sprig of curry leaves
1 cinnamon stick
2-3 green cardamom pods
1/2 tsp cumin seeds
Handful of cashew
Handful of Raisins
Salt to taste
2-3 tbspn shredded/grated coconut
Method
Wash rice & allow to drain water.
Heat about 3 tbspn oil in a pan.Fry sliced onion until golden brown & transfer to a paper towel to drain oil. Same way fry curry leaves.
After removing onion & curry leaves; add cinnamon stick, cardamom & cumin seeds. Fry them. Then add washed rice together with cashew & raisins.
Mix well & cook for about 1 minute or until rice is well coated with oil.
Now add required water & salt & bring rice to boil. In this stage, you can transfer rice to rice cooker.
Meanwhile, toast shredded coconut in a pan until golden brown.
Once the rice is done, mix fried onion, curry leaves & toasted coconut.
Serve hot.

Mung Kiribath (Milk Rice with Mung Bean)



Mung kiribath is another traditional food from Sri Lanka, Kiribath is our ceremonial food which we cook for any festival or special occasion. But I haven’t seen Mung Kiribath much in a festive table. Anyway this is a good & healthy dish as breakfast.Also it is easy to cook.

I have posted this recipe earlier, but I don’t like the picture. Most of my food pictures are while rushing. Even I have a DSLR camera, I don’t get chance to operate it after cooking. I read about food photography, but no time to do experiment….Oops anyway I love my compact camera much because it helps to take my all food pictures in few minutes.

Yesterday I cooked Mung Kiribath again & could get a better picture than earlier. So I want to share it again, also with the recipe.

I can see most Sri Lankans visit my earlier post about Mung Kiribath via google search, but this post was not much popular among my fellow blogger friends  as that time I didn’t have much followers.

So here I am posting the same recipe with new pictures & with some alterations.

Thanks Archana of The Mad Scientist’s Kitchen for your ongoing event. That reminded me about some of my old posts.

Actually my earlier recipe is as I found over searching. But yesterday I increased the quantity of Mung ata (mung beans) & I found it is tastier.
Here is the recipe:


Ingredients (2 servings)

1 cup of raw white rice
1 cup Mung beans (mung ata)
Thick coconut milk of a coconut
Salt to taste.


Method
Soak mung beans(green grams) in water overnight.
When it is softened after overnight or after 4-5 hours, we can cook the rice.

Wash rice and mung beans(green grams) and add them together to a rice cooker or a pan.

Add correct normal amount of water to boil rice, but again add 1/2 cup of water more.(because we need the rice to be sticky)

Until the rice is cooking, prepare the coconut milk mixture.
For the thick coconut milk, add salt. Stir well. Taste for the salt.

When the rice is done add coconut milk and stir well

Add more salt if required.

Cook again for a few more minutes until the coconut milk is absorbed.

After the rice is cooked, flatten in a plate



& cut in to pieces or use a bowl or a mould to make rice pieces into a different shape.(traditionally it is diamond  in shape)

Milk Rice (Kiribath)

Kiribath (milk rice) -  is a ceremonial food and included in all special occasion menus in Sri Lanka. This rice is cooked in thick coconut milk & served as pieces. Basically it can be eaten with ‘lunu miris (Sri Lankan Chilly Paste)

I have shared this recipe earlier,but that time I prepared this according to the traditional method.But same recipe.Traditionally,a piece of milk rice is diamond in shape.

Kiribath authentic Sri Lankan Cuisine


Anyway as this is our ceremonial dish,we cook this in any of special happy event.We cook this from a Birthday to a wedding,or even in the first day of an exam.Due to its ceremonial value,I thought of adding it a different look.

This is experimenting an idea of try it with a cookie cutter. But it was nice. I guess this is nice for a wedding than the traditional diagonal shape.

Kiribath recipe


As this is easy to prepare, I cook this dish as our breakfast during most of the weekends.Last weekend I could try it with my idea using some cookie cutters.

Here is the recipe

Ingredients (4 servings)

4 cups of raw white rice
Thick coconut milk of a coconut

Salt to taste.

Method


Wash rice and add to a rice cooker or a cooking pot.

Add correct normal amount of water to boil rice, (I use 1.5 cups water to 1 cup of rice to cook in rice cooker) but again add 1 cup of water more. (rice should be bit sticky when cooked)


Until the rice is cooking, prepare the coconut milk mixture.
For the thick coconut milk, add salt. Stir well. Taste for the salt.


When the rice is done add coconut milk and stir well


Add more salt if required.(but be careful when adding salt)

After adding coconut milk, cook again for a few more minutes until the coconut milk is absorbed.


After the rice is cooked, flatten & press  in a plate

How to make kiribath

Cut in to pieces.In Sri Lanka we use a piece of clean banana leaf to make the rice flatten

Serve with   Chili Paste (lunu Miris)   or a spicy curry.

Kimchi Fried Rice (Kimchi Bokkeumbap)



Kimchi Fried rice is a Korean food. I am lucky to taste it in some restaurants in Singapore. When we go out for dinner, this is one of my favorites most of the time.



Last week I tried to cook it at home.The best rice for Kimchi Fried rice is sticky rice. And it is easy to eat with chopsticks. But here I used my normal cooked rice.I found this rice is very easy & simple to prepare.It gives a different flavor & good for a change.



Anyway Kimchi is pickled cabbage covered with hot pepper sauce. Most of Korean food includes Kimchi as an ingredient. Kimchi can be prepared at home, however it is available to buy at Asian groceries.



Ingredients (2 servings)

2 cups steamed/cooked rice
1 cup kimchi
2-3 Spring onions chopped (Including leaves)
1 tspn Garlic paste
Sliced onion
Salt & pepper  to taste
Sesame oil or any cooking oil to fry


Method:

Heat 2 tbspn oil in a pan
When it is hot add garlic paste. Fry for few seconds & then add spring onion.
Add Kimchi to the pan & mix well.
Finally add the rice .
Mix well & adjust salt & pepper. Actually this rice is spicy because of kimchi.
Off from the flame.
Kimchi fried rice is ready to serve.

Seafood Fried Rice

Being fried rice is one of our favorite dishes, I have many varieties of it to post. One of the reasons that we like it is, it is tasty & easy to prepare. This dish is very helpful for me when I have to work late in office or even when I am too tired to cook many things. Also I can use my left over rice easily.

Seafood Fried Rice

For sea food fried rice, we need some seafood such as Prawns,squid, cuttle fish etc

Here is my recipe of making fried rice.


Seafood Fried Rice

Ingredients (For 2 portions)

2 cups of cooked rice
1 cup of mixed vegetables chopped (carrot, beans, green peas, spring onion etc)
About 1 cup of seafood (Cleaned prawns, shrimps,squid, cuttle fish)
1 onion sliced
Butter or vegetable oil
1 tbspn Soy sauce
1 tbspn Oyster sauce
1 egg beated

Method

Heat 2 tbspn butter/oil in a pan, once it starts smoking; Add onion & sauté.
When the onions are tender, add the sea food mix & sauté for few minutes.

Then add the mixed vegetable and mix well.
Once the vegetables are slightly cooked, make the mix to side of the pan. Then add the beated egg to the other side. Use the higher flame.
Scramble the egg.
Once the egg is scrambled, mix all seafood & veggie together with egg.
Now add rice. Mix well
Add soy sauce & Oyster sauce.
Allow to fry for about 5 minutes, but keep stirring.
Fried rice is ready to serve.

Spicy Rice

This is another rice recipe which we love to eat. This is bit spicy but we can adjust the amount of spices according to our taste.

 
Here is the recipe.

Ingredients (For 2 portions)

2 cups of rice
1 onion sliced
2 cloves
1 cardamom
1 inch stick cinnamon
1 tsp chili powder
1 tbspn curry powder
¼ tsp turmeric powder
Butter or vegetable oil
Salt to taste

Method

Wash rice & keep aside to drain water.
Heat 2 tbspn butter/oil in a pan, once it starts smoking; Add onion & sauté.
When the onions are tender, add cloves, cardamom & cinnamon.
Now add rice. Mix well
Allow to fry for about 5 minutes, but keep stirring.
Then add other spices & mix well.
Fry until rice start to pop out.
Then add correct amount of water & cook rice. Add salt, about 1tspn too.
In this stage, I normally transfer rice to the rice cooker .I use 1.5 cup of water for 1 cup of rice.
Once the rice is cooked, serve hot with any curry.
I used some Tandoori  style prawns to garnish.

Fried Rice with mixed vegetables




Fried rice is one of our favorite dishes. It is tasty & easy to prepare. On the other way it is a good way of using left over rice. Fried rice comes well when we cook using left over rice. If the rice is sticky, we cannot get the correct taste. Also we can convert it to a balanced meal by adding some meat, seafood & vegetables.

Here is my recipe of making fried rice. But here I used vegetables only.

 
Ingredients (For 2 portions)

2 cups of cooked rice
1 cup of mixed vegetables chopped (carrot, beans, green peas, spring onion etc)
1 onion sliced
Butter or vegetable oil
Soy sauce


Method

Heat 2 tbspn butter/oil in a pan, once it starts smoking; Add onion & sauté.
When the onions are tender, add the mixed vegetable and mix well.
Now add rice. Mix well
Allow to fry for about 5 minutes, but keep stirring.
Add about 1 tbspn soy sauce at this stage & mix well.
Fried rice is ready to serve.


Now I am sharing this with the event 'Fast Food but not Fat food' started by Priya & Guest hosting by Archana.Ok why I share this for the event? for me this is a fast dish with all nutrients in.I use as many as vegetables & my meal is ready in half an hour.As a full time working professional,this is my option for those days I come home late.I think this is better than buying food outside.

Ghee Rice (Dun Thel Bath)

This is a tasty rice dish from Sri Lanka.Rice is cooked after fried with Ghee,so that rice has a milkish taste.




Ingredients :
2 cups long grain rice, wash and drain
2 medium onions, sliced finely
1-2 sprigs of curry leaves
Cashew nuts
Plums (optional)
4 whole cloves
6 cardamom pods
1 cinnamon stick
Salt to taste
Ghee to fry (butter is an option if you cannot find ghee,but Ghee is more tasty)



Method :

Wash rice & keep it to drain water.

Then heat a saucepan with ghee and fry the onion until soft and golden.
Drain it & keep aside.
Fry Cashew nuts & keep it too. Same way fry plums & curry leaves  too.



Add ghee to a pan & fry spices & then add rice. Fry it under medium heat.
Then add water & bring the rice boil under low heat.(if you use a rice cooker,transfer rice to the cooker & add normal amount of water which we use for rice cooker,I normally use 1.5 cups of water for 1 cup of rice)

After rice is done,garnish it with fried Cashew & onion.
Serve with curry.

Ghee rice is ready....


If you like,you can add some turmeric to the rice.But I prefer it in white colour.
