Pasta with prawns


Pasta always comes to my mind when it comes to pack meal box. I try different pasta in different recipes and some are my own version. Usually I cook pasta in a large quantity and freeze in small quantities, so I only need to prepare the sauce when it comes to cook. This is a simple and easy recipe with prawns. I simply used pasta sauce with little bit chili powder. The taste was good with addition of prawns, anyway next time I want to add chili sauce instead of chili powder. Then I will have some vibrant colour in my dish.

Fried Bee Hoon




Fried Bee Hoon (rice noodles)

This is a recipe I try when I am not sure what to pack into meal box. We love this simple plain bee hoon (rice vermicelli) cooked with soy sauce. Though it is plain, it tastes flavourful due to soy sauce. In Singapore, I  really love to eat this plain bee hoon from Hawker centres, however they use dark soy sauce too together with light soy sauce, so the colour of Bee hoon is really nice.(A little bit darker than this ).I will share that recipe soon. Fried Bee Hoon or Fried Rice Vermicelli is one of our favourites. I like to cook this more often as it is easy to cook & ready in few minutes. I n this recipe, I only used mixed vegetables, but this is delicious when seafood is added. In Singapore, I can easily buy rice vermicelli & they tastes well once cooked.

Ginger Peanut Pasta Salad


This recipe is adapted from BHG.com, however the ingredients were slightly changed as per availability at the time of preparation & as per taste. Anyway this is a delicious pasta recipe, especially for pasta lovers. It is very easy to prepare within few minutes. Ginger & peanut added the extra taste to it.

Cheesy & Lemony Spiral Pasta


Today I am at home. But feel bit tired & sleepy. I have started my studies again after about 8 years. Lessons are interesting, but  I feel tired after attending classes during night. These days I don’t cook much because I cannot find time with office work & with studies. Today my hubby is working & I have to cook for myself only & I am a pasta lover.

I was checking some blog posts & found this Lemony Cooked Ziti Pasta recipe.How can I control myself? Now I am craving for pasta.Her recipe looks so delicious.Anyway I didn’t have all the ingredients as per her recipe.I had spiral pasta in my pantry & some veggies.
So I could taste pasta & my recipe is not same as the original recipe I refered.But mine was tastier too. :)

Here is my recipe,
Ingredients: (2-3 servings)
Pasta 250g
Green pepper (I used 2 green chili)
Red pepper (instead I used one red chili)
Spring onion leaves
Sliced 1 onion
Handful of cauliflower florests
Mushroom sliced (I used oyster mushroom)
Shredded Mozerella cheese 2 tbspn
Butter 2 tspn
1 Garlic chopped

Seasoning
1 tbspn black pepper sauce
1 tbspn lemon juice
1 tbspn olive oil
Salt to taste

Method
Cook pasta according to package details.After cooked,drain it & mix with some butter to avoid it getting  dry.Keep aside.
Heat butter in a pan,once it is hot add garlic.saute for few minutes.Then add sliced onion.When it is tender,add cauliflower.Mix well.Then add chili,spring onion & mushroom.Mix.
Now add cooked pasta to the vege mixture & mix well.Use a very low flame to cook.
Add shredded cheese on top of pasta & allow to melt in low flame.
Meanwhile,mix the ingredients under seasoning.
Once the cheese is melted,mix the pasta well.Then add this to the seasoning.
It is ready to serve.

Enjoy this cheesy pasta while it is hot.

Bird Nest (Noodles Fritters)


I found this recipe from Santi’s Kitchen.Last week I had some leftover noodles from previous day & thought of trying this recipe for tea time. The taste was good & it was easy to prepare too.

Here is my recipe.

Ingredients (for 6 fritters)
1 small packet of cooked noodles (or leftover cooked noodles)
1 egg beaten
Salt, pepper & chili powder to taste
Some vegetable or cooked peas to garnish


Method
Preheat oven to 400 F degrees
Beat egg with chili powder, salt & pepper.

Mix cooked noodles & beaten egg together.
Grease a cupcake pan.
Fill cupcake pan with noodles mixture as shown.

Bake in oven for about 25minutes.

Remove all baked fritters on a wire rack.

Garnish with some vegetables.

As I prepared this with some leftover noodles,& also we are spicy lovers,I garnished it with some capcicum.I suggest any kind of cooked peas would be better & will give the idea of a bird nest.

This is so easy to make & good for tea time.

Spicy Fried Macaroni


Macaroni is another easy to prepare dish and I like to cook it sometimes for dinner or mostly to pack with meal box.




This recipe is bit spicy, but the amount of sauces can be adjusted.

Here is the recipe

Ingredients: (2 servings)

1 cup of macaroni
Mix of vegetables about 1 cup (carrot,cabbage,spring onion )
Cooking oil 2 tbspn
1 tbspn tomato sauce
1 tbspn chilli sauce or sambal chilli
Salt
Water to cook macaroni
1 tspn ginger garlic paste

Method

Boil water & cook macaroni for about 10 minutes or until soft.(use the package directions)
Add some salt to the water while cooking macaroni.
Once cooked, drain & keep aside.

Heat oil in a pan.
Add ginger garlic paste when oil is hot.
Once it gets the fragrance, add all vegetable mix & mix well.
When the veggies are cooked, add tomato sauce & chili sauce.
Mix well
Add cooked macaroni to this & mix all together.
Add more sauce according to your taste
Simmer for few minutes & remove from the flame.

Spicy macaroni is ready to serve.


And I used it to pack in meal boxes.

Simple & Easy Spaghetti dish with Black pepper sauce


This is a very simple recipe I used to cook, mostly when I am in rush. Anyway I am a spaghetti lover too.

On the other hand I like the taste of Black pepper sauce. So this is one of my easy & loving dishes when I cook for myself.




Ingredients: (2 portions)

Spaghetti enough for 2 servings
1 tbspn Black pepper sauce
Few spring leaves cut into pieces
1 tbspn oil
Water to cook spaghetti
Salt

Method

Boil water
Add spaghetti & cook for about 10 minutes or according to the product details. Add some salt to the water while cooking


Once it is cooked, drain water, keep aside.
Heat 1 tbspn of oil in a pan.
Once it is hot,mix spaghetti.And add 1 tbspn black pepper sauce.If you like more spicy,add another spoon or add according to the taste.
Mix well.
Toss some spring leaves.
Switch off the flame & serve hot.



Anyway this is a dish I prepared to carry in meal box. It is so simple & easy to prepare within 15 minutes.

Fried Instant Noodles with Mixed vegetables


Do you like instant noodles? Most of us like it because it is instant.
Anyway I do not use the sachet inside it. As I know it contains MSG which is not good for health.



Why don’t we spend another 4-5 minutes & prepare a tasty & healthy dish without using any flavoured pack?


Here is my way of preparing instant noodles.

Ingredients (For 2 servings)

2 packs of instant noodles
1 cup of sliced mixed vegetables (carrot,leek,spring onion,bell pepper,cabbage etc)
Cooking oil about 2 tbspn
Water to cook noodles
Salt & pepper to taste


Method

Allow water to boil in a pan.
Then cook the noodles as per instructions in the packet.
Drain it & keep aside.
Heat 2 tbspn oil in a pan,once it is hot add the vegeatable mix.
Sauté for few minutes until cooked.



Add some salt & pepper too.
Mix well.
Then add the cooked noodles & mix well.
It is ready to serve.


I can’t say it is cooked within 2 minutes as instant noodles do.
But this dish is ready within less than 10 minutes.

Mini Mac N Cheese Cakes


Few weeks ago I was at home after a busy working week, and wanted to try a new recipe. When I was browsing for a recipe, I found this Mini Mac and Cheese cakes!! Thanks Cooking with Mel  for the original recipe.

I did few alterations to my recipe & it came out well.
Here is the recipe for Mac n Cheese lovers.


Ingredients (For 6 mini cakes)

½ cup uncooked macaroni
1 ½ cup of Shredded cheese
1 ½  cups of Cereal, finely crushed.(instead you can use bread crumbs too)
4 tbs unsalted butter
1 tsp of all purpose flour
½ cup fresh milk
Pinch of salt


Method
Preheat the oven to 375 degrees Also move the oven rack to the lower third portion.

Meanwhile cook the macaroni according to product details. Add the pinch of salt to the water boiling with macaroni.

Keep the macaroni drained, after cooked.

Lightly grease 6 regular sized muffin tray or use muffin cups (oven proof)
In a bowl, mix crushed cereal,1/2 cup cheese & 3 tbs butter together.



Then divide this mixture among the muffin cups. Using hand or small spatula, press the mixture firmly into the cups.



Now keep a medium saucepan on the burner, heat it over medium flame.
Whisk remaining butter & flour.

Then gradually add milk with stirring well.
Cook for about 5 minutes until you get a thick mix.


Then add ½ cup cheese & mix well until the cheese melt well.

Add cooked macaroni to this & mix well.


Now fill the muffin cups with this mixture (remember we have already lined up the cups with the crust before)

Sprinkle the remaining cheese on top of each muffin cup

Bake about 20 minutes or until golden brown


Cool and enjoy mini cakes….
