Watalappan is an easy, sweet dessert from Sri Lanka. It is one of the most popular desserts and has become one of the must have desserts in any special occasion including a wedding. Anyway, once searching for details, I found that this dessert has a Malay origin and the Sri Lankan Malay community calls it as ‘Sirikaya’.Kaya is something familiar for me here in Singapore. I’ve tried kaya toast which is toasted bread with kaya jam. So far I didn’t check what kaya is or how to make it. Interestingly, kaya is a jam made of coconut and egg. This watalappan pudding is also a result of coconut and egg steamed with jaggery.Sometimes it is interesting to know a bit of the history of food,isn't it?

|Caramel Pudding-Sri Lankan Style|
Caramel Pudding is a very popular dessert in Sri Lanka. But, it is not purely Sri Lankan. This is an easy dessert popular among most people around the world. Even it has different names like cream Caramel, Caramel Flan, Custard Pudding or Caramel Pudding. I’ve seen a lot of recipes for Caramel Pudding. Most recipes require 5 eggs for the same ingredients and quantities. However, I used only 3 eggs, also I didn’t use water. For the custard, I added sugar, you can remove it if it is too sweet. Anyway I am not a big fan of sweet treats. Still I didn’t feel this pudding is too sweet. I really don’t like to try desserts when I feel that I have to wash a lot of utensils or when I am unsure of achieving the best appearance and taste. For the below recipe, I am sure even a kid can achieve a good tasting Caramel Pudding without much effort.

I am back with a recipe for Valentine’s day. It is too early to post recipes for Valentine’s day, but I feel bit lazy to start work after a holiday in Sri Lanka. This is a simple recipe using Guava and Agar Agar.
I brought some Guava (Pera) from Sri Lanka and want to utilize them in different recipes other than eating them raw. These small guavas taste much than the bigger sized one.

Today Agar Agar recipe is with Sago. Sago Desserts are always delicious & healthy. Adding Agar Agar to it gives a delicious Sago Pudding. In Sri Lanka, we always cook Sago with Coconut Milk. So,I used coconut milk in my recipe. If you cannot find, Agar Agar easily in your area, unflavoured gelatin is the substitute. Anyway, after trying few recipes with both Gelatin & Agar Agar, I prefer Agar Agar.

Agar-agar is another form of gelatin.It is a great way to create easy & colourful desserts. However Agar Agar has a firm texture when compared with jelly. Interesting fact is, it is derived from seaweed & considered as vegetarian. Any fruit or any flavour can be used with Agar Agar to make a delicious dessert. There are so many recipes & ideas.

Fruit salad is a very easy & simple dessert. This time I tried it with a different dressing & I found it is tasty.
Here is the recipe.
3 cups of mix fruits of your choice.(I used Banana, papaya & Mango)
1 cup of orange juice
1/3 cup honey
¼ cup lime juice (or juice of 1 lime)
First prepare the orange juice & keep it in a bowl.
Cut all fruits into bite size pieces & add to the bowl with orange juice. This will prevent discoloring of fruits.
Mix all together; cover the bowl with a plastic wrap or a lid.
Keep refrigerated for about 2 hrs.(you can prevent this step depend on the situation)
In a medium bowl, Whisk honey & lime juice together until smooth.
Spoon the salad into serving cups.
Drizzle it with honey lime dressing.
Serve & enjoy!!

Today my Blog turns into 1 year old. I can’t believe how much I have changed within this year. I have found a lot of friends via this Blog whom all are interested in same subject.
I could explore different cuisine & could learn cooking much better. I could do my daily cooking happily because of the Blog.
These all things are because of all of your comments & encouraging words. Thanks dear friends & hope to see you around my Blog in future too.
My exam date is almost near & I don’t do much cooking this days. Therefore I want to share this easy Mango Parfait recipe with all of you.

Parfaits are very easy to prepare .This mango parfait is very tasty with the flavor of yoghurt.
Ingredients (for 2 servings)
2 cups vanilla non fat yoghurt
1 cup mango puree
1 cup good quality granola
Add a layer of vanilla yoghurt into the bottom of the glass.
Then add a layer of mango puree on top of this.
Again add a yogurt layer. Repeat this according to the glass height.
Garnish with granola.
Instead of granola, some crushed wafers can be used

Sago is with full of starch or carbohydrates, but low in fat, protein or other vitamins. It is good when you are sick as it boosts energy & easy to digest. In Sri Lanka, sago is used as a herbal remedy to treat ailments resulting from body heat. This sago dessert is from Sri Lanka and it is good to have time to time to cool the body.
However in Sri Lankan traditional sago dessert does not include fruit juices. I tried it with fruit juices as an experiment and it was a success.
Here is the recipe
Ingredients( 4-5 servings)
1 cup Sago pearls
2 cups Water
1 cup Thick coconut milk
3 tbspn Sugar or as per taste (I use less sugar)
1 cup Fruit juice/puree of choice (optional)
Heat water in a pan.
Add sago pearls & bring to boil.
Remember to stir continuously to avoid sticking sago at the bottom of the pan.
Once sago is boiled, add thick coconut milk & stir.
Add sugar to taste.
Adjust water if you want it thinner.
Serve hot or chilled.
Above recipe gives a plain sago dessert like this.
However I tried adding fruit flavour to it.
After cooking plain sago, pour it into few bowls & mix with fruit juices. I mixed each portion with mango puree & water melon juice
Adding fruit juice not only gave the flavour, it gave a very colorful dessert too.

This biscuit fingers pudding is easy to prepare. However it will take about 6 hours to prepare this.
I found this recipe from a book & this is another yummy recipe from it.The name of the book is ‘Pudding Cake’ published by 'One Publisher' (A Publisher from Malaysia)
Because the recipe is with using cocoa powder, it is full of chocolate taste together with the taste of biscuit.
Ingredients (enough to fill 2-3 small glasses)
Unflavoured gelatin 4 tbspn (check your package details too for amount need )
Hot water 2 cups
1 tbspn dark cocoa powder
Biscuit fingers 10- 15 numbers
2-3 small glasses as moulds
Mix ingredient A together adding hot water slowly. Whisk using a fork to avoid lumps. Bring it to boil.
Pour this mixture into glasses, but make glasses to fill half.
Allow to cool & keep in fridge to set completely.
This will take about 2-3 hours to set completely. Remember to shake the remaining mixture time to time for not to allow setting.
After it is set almost, take out & insert biscuit fingers. Insert more fingers if you like, I used 5 fingers per glass.
Now fill the glasses with remaining mixture.
Keep the glasses inside the fridge & allow setting. This will take another 2-3 hours.
Once it is set, remove to a plate. Using a flat spatula, remove the pudding from the sides of the glasses. Then it is easy to remove.
Cut into slices.
Serve & Enjoy!!

This Mango & Milk Pudding is very easy to prepare. A simple dessert that we can prepare by keeping the rich flavour of mango in it.
3 cups pureed mangoes
1 cup condensed milk
2 tbspn unflavored gelatin
¾ cup sugar
1 cup hot water
Add gelatin & sugar to hot water & mix well.
Easiest method is , first mix sugar & gelatin together. Then dissolve this sugar & gelatin mix using hot water.
Now gelatin & sugar is dissolved in water, & keep aside.
In a bowl mix mango puree & evaporated milk together.
Pour this mixture into a mould or a bowl or few serving bowls, chill until it is set.
It will take about 3 hrs to set completely.
If you want to remove the pudding from the mould or bowl, first dip the bowl in hot water slightly, then turn it into a plate.
Garnish with some mango slices or fruit.
Serve & enjoy!!

I found this recipe from a recipe book which I bought few weeks ago. The name of the book is ‘Pudding Cake’ published by 'One Publisher' (A Publisher from Malaysia)
I am really attracted to the recipes of it. I can’t wait until I try all the desserts from that book. Friends, I am sorry, I will post many pudding recipes I tried. Hope you will not get bored.
I did the changes for the quantities from the original recipe as I want to make it in a small quantity.Also arranging of strawberries are different from the original recipe.
Here is my recipe.
Ingredients (serves about 8 assuming 1 slice each)
1 mini swiss roll-cut into 1cm slice (I used store bought swiss roll)
Few strawberries (about 5 nos)
1 1/2 tspn Unflavored Gelatin (or agar agar powder) (check your package details too for correct amount to set)
1 cup hot water
3 tsp unflavored Gelatin (or agar agar)
2 cups hot water
1 strawberry yogurt (standard size)
1 scoop of vanilla ice cream (recipe says 150ml fresh cream, but I used a scoop of ice cream)
Use a rectangular cake tin or a mould or a plastic container as I did.
Slice the swiss roll into 1cm slices & arrange it as bottom layer.
Now we use ingredients A
Slowly mix gelatin with water & bring it to boil.(ingredients A)
Pour it into the mould which swiss rolls are arranged.
Better use a spoon & slowly pour the mix to the mould. If not swiss rolls can get damaged.
Keep in the fridge & allow to set.(about 15 minutes)
Now we go to ingredients B
Mix sugar & gelatin together. Then it is easy to dissolve in water.
Mix gelatin, sugar & strawberry yogurt with water (from ingredients B) & bring it to boil.
You can see some pieces in below pictures,they are some strawberry pieces which were in the yogurt.
Allow to cool slightly. (say mix B)
Take half of mix B,and add the ice cream scoop (or fresh cream) & mix well.
Pour this mix slowly on top of swiss roll layer (already set)
Keep in the fridge to set. (15-30 minutes)
Meanwhile wash, clean & slice strawberries.
After the 2nd layer is set,
Arrange the strawberry slices on top of it.
Then slowly pour the remaining part of Mix B on top of strawberries.
Cover the strawberries completely.
Place in the fridge to set.
It is already set now & here is a side view with 3 layers.
After it is set,
I removed it from the mould (To remove easily -keep the pudding with the mould in hot water for few seconds, then slowly remove it on a plate.)
Decorate it with some strawberries or as you wish.
Slice it & serve.
Hint: First I sliced as long strips, but I had a difficulty to serve as it seems like breaking.
But it was successful when I sliced as 2 inch pieces.
I was lucky to share this dessert with few of my friends & their comments were so good. So I am sure you would love it too.
