It is fun to have a smash cake for a first birthday. Enjoy some great moments of your baby and capture some beautiful photographs while he smashes and enjoys playing with it freely. Making a smash cake at home is really easier than you think if you go with a simple design. Here is what we did.

When we were planning our son’s first Birthday party, I saw beautiful photos of first birthday babies with smash cakes. I want to say that this idea is not Sri Lankan. But, we had a smash cake for him and he enjoyed smashing it. That will be a good memory for him once grown up.

My first ever try of Baking & Decorating a Birthday Cake


Ok, I want to say I am just a beginner for cakes & cupcakes and I started to learn baking & decorating few months ago. Anyway I didn’t get any chance to bake a cake for anybody.

As my niece visited me last month & as she celebrated her birthday with us, I purposely planned to bake & decorate her cake at home. Anyway it was not very neat & tidy as we buy a cake from outside. Also it consumed some time & I found few mistakes I did. Basically I am not satisfied with the appearance of the cake. It is not very neat as I wanted.

Before going to the cake, here are the mistakes I did.

  • I am not an expert & this is my 1st time of baking a cake for some other’s Birthday. But I didn’t prepare ahead. So I found that I didn’t have enough time to do the finishes nicely.

  • Not only the cake, I had to prepare lunch & some other food for the party. But I started everything in the same day.


Anyway, by spending 5-6 hours continuously, I could come up with this cake & some other food for the party including baking the cake.


Our theme for the Birthday party was ‘Pink & Yellow’. Therefore I decided to decorate the cake using both colours.

Here is how I did,

For the cake

  • I baked a small size simple butter cake(top part). Recipe can be found here.
  • The bottom part is a Cake dummy. The reason for not baking a big cake is that we didn’t have guests other than family members. So this is my plan to not to waste or not to have left over cakes.

Decorating the cake

  • I used buttercream icing.

  • First I wrapped the cake dummy with a plastic wrap in order to prevent patches from food colouring or icing.

  • I treated the dummy as a real cake & applied the first layer of Pink icing. Kept it in the refrigerator for about 10 minutes.

  • Meanwhile I covered the Baked Butter cake (which is already cooled on the wire rack) with yellow buttercream icing. After applying the icing, I transferred it into the fridge & took the dummy out.

  • I kept the dummy on the cake board which I am going to use.

  • Then using a spatula, I tried to make the icing layer thinner & neat. I used a cup of hot water & put the spatula in it before using for the decoration. This made it easier to apply icing evenly.

  • Then I took the butter cake out from the fridge and kept on top of the dummy.

  • Continued with decorating.

  • I used the star tip for almost all the decoration & it was simple.

  • However I was running out of time & I had to finish it.Sprinkled some colourful sprinkles on top of the cake.

  • I could see some mistakes on the cake, but had to finish it.

  • Finally I found that I haven’t plan for writing any wishes or words on the cake. But according to my choice I couldn’t find a place on the cake to write any word. Instead I used a Ribbon bow on the dummy part of the cake.

Anyway we had a good time with our niece. She celebrated her 2nd Birthday with her Aunt’s cake.

It was a garden party & I forced my brother & sister in law to dress matching with the colours ‘Pink & Yellow’. :)

Mini Cake Bites


I loved making these mini cakes. I selected heart shape as it is almost near to Valentines Day. 


The method was so simple. I decorated these on today morning for my brother & family (specially for my niece) as they will visit me today.I am excited & eagerly waiting to see them.Hope they will like these mini cakes.




Here is my recipe:

Ingredients

1 cake recipe (I used a simple butter cake)
1 cup Buttercream icing for decorating
Glace Icing


Special equipment

Small heart shaped cookie cutters


Method

First pre heat the oven & make the cake according to the recipe. I prepared a butter cake & shred the recipe here.

After the cake is done, allow to cool it completely for about 20 minutes. Then wrap with a plastic wrap & freeze for at least 1 hr.However I kept it in the freezer for about 1 day. This will make it easier to cut the cake.

 After 1 hr, take the cake out & remove the wrap.Then slice it.
Using a cookie cutter cut  small heart shaped pieces from the slices.
(While cutting to heart shapes, some of the parts have to be discarded. I used those discarded parts in cake pops)

Now heart shaped cakes are ready & need to decorate.

I used Glace icing to cover them.(mix 100g icing sugar (sifted) with about 15ml water,whisk well,add water slowly to the icing sugar until desired thickness is achieved)


Then decorated with some butter icing.

Drop Flowers with Royal Icing


Drop flowers are always easy to make & good for beginners like me.I used a star tip to make drop flowers. Made them on a parchment paper.They can be  used  later (after 24 hours) to decorate cakes or cupcakes. They can be used directly on top of cakes, cupcakes too.
I just made these drop flowers to practice with royal icing. After making the flower, I used a white drop of icing in middle of it.Below is a picture of flowers just after making.

Now I have these flowers,but couldnt find time for making some  cupcakes yet. :)




Recipe for Royal Icing


Here is the recipe for royal icing in a small quantity.

Ingredients

1 egg white (at room temperature)
1 ¼ cup powdered sugar-sifted
½ tsp lemon juice
Method

Using a mixer, mix all ingredients in low speed. However for a small quantitiy,I found use of a whisk is easier. Add a bit more powdered sugar to achieve desired texture if needed.
Add food colouring.
Make sure to cover the icing with a damp cloth when it is not using.

Rainbow Cupcakes



I was inspired by seen Rainbow Cupcakes in many blogs & websites & thought of trying them. However I used only two colours & selected colours as Red & Green. Red & Green perfectly match with this Christmas season.



Here is my recipe.

Ingredients(12 nos)

100 g Butter in room temperature
100g sugar
100g flour sieved
2 eggs in room temperature
1 tsp Baking powder
½ tsp vanilla essence
Red & Green food colouring


Method

Preheat oven for 350F.Line the baking pan with cupcake liners.
In a bowl combine flour & baking powder, keep aside.
Beat butter & sugar together in low speed for 2 minutes. Then gradually add eggs for this mixture and mix in high speed for about 2 minutes until the batter become smooth.
Then add vanilla essence,
Also gradually add flour while beating.
Once it becomes a smooth batter, divide to two portions. Add few drops of Red coloring & make one portion in red colour. Do the same with other portion & make it green. (If you use more colours, divide the mix accordingly & mix with colours.)

First fill the ½ of cupcake liners with Green coloured batter.
After that use Red coloured batter & fill upto ¾ of the cup.

Bake for about 20 to 25 mins  or until baked well.
A tooth pick inserted to cake should come out clean when it is baked.


Once it is baked, transfer to cooling rack to cool down completely



Frosting

I used buttercream icing for decorating.
Used star tip & decorate it with a simple design.

Vanilla Cupcakes



This is a very basic & delicious cupcake recipe.I decorated them using buttercream icing.



Ingredients(12 nos)

100 g Butter in room temperature
100g sugar

Method

Decorating Challenge - Event Announcement


Cakes, cup cakes or cookies are considered as desserts but nowadays they are not only desserts but a way of expressing a theme or simply they  have become a piece of art. Even nowadays they play a major role in most of the ceremonial events.
How if we can decorate a piece of art for any occasion? Nowadays it is easier to buy a decorated cake, cupcakes or cookies. But the happiness we gain by making it ourselves is different.

Keeping this in mind, I have started to learn decorating with icing/frosting. But I always like to share my work with others, love to see their comments, the same way I like to see how others do creative things. We can learn faster by exchanging ideas or working as a group.
I had this idea of having an event but was not sure how will be the reaction from my blogging friends. Few days ago I posted my beginner cake, but with the comments I received, I was encouraged to continue with my new event.

Simply this event is to self learning on how to decorate with icing/frosting.

I have planned to learn one type of icing/frosting in each month.

To begin the event, Buttercream icing becomes the first theme.

Here are the simple procedures of the event.

Decorating with Buttercream Icing

Buttercream icing or buttercream frosting is very easy to prepare & it tastes well too. It goes well with cupcakes or cakes & there are many piping & decorating methods from it.
It is a good icing method for a beginner like me.
Here is my basic buttercream icing recipe:

Ingredients:
½ cup shortening
½ cup butter
4 cups confectionary sugar
2 tbspn milk
1 tsp vanila
First beat butter & shortening. Add vanilla & mix well.Then add confectionary sugar slowly & mix well. Then add milk & continue beating until get a smooth paste.

After preparing the icing, we can add any flavour or any colour.If you do not have shortening,replace it with butter.


I found that these books are helpful for anybody who are new for cake decorating.These books gave me the basic idea of how to do decorating.

Buttercream Roses



Here is the 2nd try with Buttercream roses & it was better than the earlier cake.

Oh yes,my roses are different from actual roses. :)


But these roses made me happy as they were my begginer cakes.


Decorating with Buttercream Roses


Here is my try of making roses with butter cream icing. Still I am very new to cake decorating & here is my 1st try of making roses.You can see that with these photos.Even the out lines are not straight & smooth. :)
And I don't have some correct tools yet,so I used alternative methods. :)


This cake was done few months ago, but I couldn’t post it. Today I thought of posting few cakes I have done earlier. There is a reason for it….Because again I am in a mood to decorate some cakes.

Starting of a new journey to explore cake decorating-Henna Cake

I am a toddler when speak about cake decorating. I have decorated few cakes, less than 5 but they didn’t come out neat & nice as I expected. Have to improve more from the beginning.
Even I didn’t share those here as they were not neat & nice. But I always learnt cooking by sharing with others & improved with the comments I received. So I thought of sharing those my first cakes here & started a new journey to explore cake decorations.


This cake is decorated using butter icing.(I used a butter cake)
My butter icing recipe
½ cup shortening
½ cup butter
4 cups confectionary sugar
2 tbspn milk
1 tsp vanila

First beat butter & shortening. Add vanilla & mix well.Then add confectionary sugar slowly & mix well. Then add milk & continue beating until get a smooth paste.

Used the tip which we use for letters. (Tip no 2 )
I wanted to try a ‘Henna Cake’. I thought it would be easier. Oh what I thought was not correct. It was not easy  to get the lines continuously.
However taste was good.
