We like Cauliflower in our daily cooking. But, I don’t like to cook Cauliflower as a curry always. I tried it as a spicy appetizer and came out very well. Actually I used Sri Lankan style Chicken devil recipe and substituted cauliflower instead of chicken. Also did some changes to spices. Final outcome was really good.
On the other way, Cauliflower is a vegetable which is good to add into regular diet because of its health benefits. Do you know, it is a very good source of vitamin C? I never thought! But found while reading some articles on Cauliflower healthy benefits and amazed to see it is a rich source for vitamin B & C.

I like these Veggie cups, because it is an easy & healthy appetizer. Also it suits as a vegetarian appetizer and good to prepare for a party or a small gathering. I used a mustard dip with colourful veggie cups; anyway the sauce can be changed as per the taste. Usually I prepare this for an evening as a healthy snack. Not only the vegetables mentioned in below recipe, I use some other veggies which can be eaten raw.
If it is a party or a gathering, I use small cups to keep the veggies as an individual serving cup, then it is easy to serve and it looks pretty!

Devilled Chicken is a popular dish in Sri Lanka. Mostly it is served with fried rice in Chinese restaurants. (In Sri Lanka) Recently I did this experiment with some chicken sausages and it came out well. I introduced Sausages into chicken devilled recipe instead of chicken. That was a good alternative for chicken devilled. This is a really easy dish to prepare in few minutes, even no much cooking cleaning etc.

Prawns Wrapped in Ham Slices



These Prawns wrapped in ham slices were a great hit and vanished fast. Prawns are one of our favourites and I used to cook different recipes using prawns. When it comes to a gathering, this is an easy dish to prepare as an appetizer.


Here is my recipe of Ham wrapped  prawns.

Ingredients (for 12 nos)

Prawns 12 nos
Ham slices 12 nos
BBQ sauce
Black pepper sauce
Few tooth picks

Method

Pre heat oven to 425F
Clean prawns properly.
I microwaved Ham slices for 1 minute before using.
Then wrap the prawns using ham slices & inserted a toothpick to keep it wrapped.
Then I brushed some Black pepper sauce & BBQ sauce together over them.
Baked in aluminum foil lined baking pan for about 15 minutes.

Serve hot. It was a really tasty finger food.

Bread Baskets


I found this recipe last Saturday from Recipe Lion & wanted to try it for tea time as an evening snack. It was very easy to prepare & a good way to use some bread slices left from morning.Anyway my recipe is adapted from the original recipe & with some changes in ingredients.


Ingredients (for 6 bread Baskets)

6 slices of bread
Few sliced red bell pepper
Few sliced green bell pepper
Few sliced tomato
Shredded Cheese
Butter
Salt pepper to taste


Method
First allow to pre heat oven for 400F.
Remove the edges of the bread.
Apply butter on bread.
Arrange the bread slices on cupcake baking pan. Keep the butter applied side as outside of the basket.
Now there is a space in bread basket.
Fill the baskets with mixed red, green bell pepper & tomato slices. Sprinkle some salt & pepper as per choice.

Top with shredded cheese (Treat the bread basket as a pizza base & use a mix of your choice to fill together with cheese)

Bake in 400F for 15-20 minutes.
Now it is ready to serve.

I used some cupcake cups to serve as it gives some finishing appearence. :)

Vegetable Roti



In Sri Lanka, we have popular appetizers or snacks which commonly call as ‘short eats’. I am not very sure they were prepared at home as it is very easy to buy.

Anyway this vegetable roti is a popular Short eat in Sri Lanka & they were prepared using Godamba roti.(Paratha).

As I have frozen paratha, this is a easy snack at my home most of the time.


Here is the recipe:
Ingredients (For 5 Vegetable roti)

5 uncooked Godamba roti / (paratha)
1 boiled potato-mashed
A handful of sliced spring onion or leeks (I used spring onion)
Sliced mixed vegetables of your choice (Carrot, cabbage etc)
Few curry leaves sliced
Onion sliced
1 tsp Chili powder
Salt & pepper to taste
1-2 tbs oil

Method
To prepare the filling,
Heat oil in a pan, once oil is hot; add mashed potato together with other vegetables. Mix & add chili powder, salt & pepper to taste.
Cook the mix well & switch off from the flame.


Take one paratha, scoop a portion of the mixture on it.(Check here on how to make paratha/godamba roti) 

However I used store bought 'Frozen Paratha',let it thaw before  wrapping, if you use frozen paratha.

Wrap it as shown below into square shape.


 Heat a flat pan & cook wrapped vegetable roti, turning both sides & also sides.

Serve hot. It is tasty alone or with some tomato sauce.















Easy Cucumber Appetizer



I came across this recipe in a website some time ago & tried at my pantry. These pictures were in my computer for some time,& thought of posting it.
This is a very easy recipe & good for anytime as a quick snack or an appetizer.




Ingredients:
Cucumber
1 onion
1 capsicum
1 tomato
Few tooth picks
Salt & pepper

Method
Wash cucumber & other ingredients.
I didn’t peel the skin of the cucumber, but if you don’t it the skin, peel the skin & cut into few round shape slices.
Same manner, slice onion into rounds.
Slice tomato & capsicums.
Sprinkle some salt & pepper according to taste & mix all.
Arrange cucumber piece, onion round, tomato piece & a capsicums piece as in photos using a tooth pick.





Serve with tomato ketchup.
You can add any fresh vegetable to these bites according to choice.

Wrapped Sausage Bites (Pigs in a Blanket? )


Ok, first I want to say that I don’t eat pork or many other meats. But this is a recipe I have read some time ago & it was in my mind. After I tried it, I wanted to find a name. What I did is, searched in Google & found this name. Yes, these appetizers look like ‘pigs in a blanket’ & this is something that a hot dog becomes a pig…..:)

Anyway here is the recipe & it was very easier to prepare.
Ingredients
A prepared dough (Any pastry dough goes with this & I have frozen paratha,so I used it)
Few sausages

Method
Pre heat the oven to 400F
Cut a strips from the dough.
Wrap it around the sausage.
Then cut the wrapped sausage into small pieces of about 2 inch.

Bake in 400F for about 20 minutes or until golden brown.
Serve with any sauce.

Really simple and easy appetizer & I think this is good to serve in any gathering.
 I found some recipes,that they use cheese inside the dough (blanket).Also I saw some  recipes which they use cabbage as the wrap.Anyway,it depends on the way we prepare & I am sure this would be tasty in anyway...

Ash Plantain Fry


In Sri Lanka we have a variety of plantain called ‘Ash Plantain’.We use that one for cooking. Even we use  the skin of it as a stir fry.
Here in Singapore,I cannot find the same variety, but I cook same dishes using another type of raw banana found here.
This Ash Plantain fry is a very simple dish & matching with rice & curry.
Ingredients:
Few ash Plantain
Salt
Turmeric powder 1 tspn
Oil to fry

Method:
Peel the ash plantain & slice it.
Mix with turmeric powder & salt.

Deep fry until golden brown.
Serve & enjoy.


This is a so easy simple recipe & is one of must have dishes in Sri Lankan tasty dish,Lampraise.
