Ingredients (for 2 person)
- 2 cups of cooked Basmati or long grained rice
- 1 tbsp oil
- 1thinly sliced onions
- 2 cloves of garlic ,minced
- 1/2 cup fresh or frozen sweet corn
- 1/4 tsp turmeric powder (if you prefer yellow look)
- 1/4 tsp coriander powder
- 1 tbsp lemon juice
- salt to taste
MethodIn a shallow pan, heat oil and saute the onions and garlic untill golden brown.
Add the coriander powder and saute for a minute.In this stage add turmeric powder if you prefer.
Add the corn and saute for a few minutes till the vegetables are cooked.
Then add the lemon juice and salt to taste and mix well.
Now it is time to add cooked rice. Then mix well.
Saute for a minute or so to let the liquids dry.
Serve hot with any spicy curry.
